I had some friends over yesterday for our monthly Mommies' Group, and I decided to try out a new recipe on them. Laura had a Pampered Chef party last month which I was not able to attend, but I did order their loaf pan, and it came with this recipe. I hope Pampered Chef does not mind my sharing this recipe!
Do you know the verse in Matthew about not building a tower until you have counted the cost? Well, don't double (or triple) a recipe before counting your eggs! I bought three zucchini for this recipe and realized that I had way too much, so I decided to double the recipe. I still had plenty of zucchini and decided to triple the recipe. After I had everything but the eggs in, I realized I only had seven. I needed six for the bread and two for the quiche I was also making. Thank you, again, Laura, for helping me out!! Now I have two loaves in my nice new freezer!
Spiced Carrot-Zucchini Bread
2 1/4 cups flour (I used half all-purpose and half wheat.)
1 cup sugar
1 1/2 tsp ground cinnamon
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp gound cloves
3/4 cup finely chopped carrots
3/4 cup finely chopped zucchini
1/2 cup coarsely chopped walnuts (I don't like nuts, so I left them out.)
2/3 cup vegetable oil
1/2 cup milk
2 eggs, lightly beaten
In a large bowl, combine flour, sugar, cinnamon, baking soda, baking powder, salt, and cloves. Add Remaining ingredients; stir just until moistened.
Spoon batter into pan. Bake at 350 degrees 60-65 minutes or until wooden pick inserted in center comes out clean.
(These ingredients make one loaf.)
This bread was very good. Laura, Ivy, and my other friend who was there all asked for the recipe. Actually, they asked if I was going to post it today. Of course!

This definitely sounds healthy at the very least. I love zucchini, but it's been a little scarce this year. If I get some at gleaners this week, I would love to give this recipe a try.
No recipe post this week for me. I offered an explanation on my blog. Like I said, I may pull something off this evening, but I'm trying to take it a little easy once school is done for the day.

Next week. Next week Dustin will be home during the week, so next week I will resume cooking and I will have something to post. I'm terrible for admitting this, but I honestly have not eat at my house at all since Dustin left except for last Wednesday night's frozen dinner...and that is including breakfast and lunch. Needless to say, both me and my wallet are tired of eating out.
Sounds good. I like to bake extra & freeze too. But not the chocolate chip cookies I linked on.
