I am always on the lookout for new muffin recipes because a home-baked breakfast is so much better than cold cereal. At the Southern Living party I went to last week, the consultant gave me a little recipe book with this recipe in it. As soon as I read it, I knew I had to try it.
Strawberries and Cream Cheese-Filled Muffins
1/4 cup (2 ounces) 1/3-less fat cream cheese, softened (I used the regular, full-fat cream cheese. I have a baby who needs all the fat he can get so his nerves develop correctly.)
2 tablespoons strawberry preserves
2 1/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
2 teaspoons poppy seeds
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups low-fat buttermilk (I used plain yogurt instead, and it worked fine.)
3 tablespoons vegetable oil
2 large egg whites
1 large egg (I just used two large eggs.)
Cooking spray
Preheat oven to 375. Combine cream cheese and preserves; stir with a whisk.
Combine flour and next five ingredients; make a well in center of mixture. Combine buttermilk, oil, and eggs. Stir well with a whisk. Add to flour mixture, stirring just until moist. (I just dumped everything in together; the key is not to stir too long or the muffins end up flat. Did you know that? I just learned it.)
Spoon batter into 12 muffins cups coated with cooking spray, filling one-third full.
Top each with about 1 teaspoon cream cheese mixture; divide remaining batter evenly over cream cheese mixture.
Bake at 375 for 25 minutes or until muffins spring back when touched lightly in center.
Yield: one dozen
These were so very good. The poppy seeds were a nice touch, but the real treat was the preserve-cream cheese mixture. Yummy! Silly Sarah Beth didn't like how the goody was slimy, so she tried to wipe it off. I imagine that this recipe would work fine with plain jelly, or any kind of preserves.

You should open a bakery with your love of baking muffins, LoL. Sadly, my oven doesn't seem to bake them very evenly. I'm blaming my oven anyway;) Which is probably a good thing in a way because I can never stop with just 1!
I hope you have fun at the Aquarium!! Those muffins look so yum. I crown you the Queen of Muffins. You should seriously go into business selling these! I agree with mykidsmom!! :) :) That was a funny story about Sarah Beth and her nap time yesterday!! I can't wait to see her again!
I love muffins and I especially love anything with cream cheese in it. Looks so good!!
Open a bakery?? Don't I have enough to do already? But I do love to bake. I just wish baked good didn't have so many calories. I would love to bake cookies, muffins, cupcakes, quick breads, etc. all day long. And eat them, of course. But then I would be FAT!

Sorry I didn't get to participate! As you'll see in the post I just wrote, the only thing I cooked last week was chicken Parmesan, and that definitely wasn't a new recipe! I'll be ready this week, though!
