Anyway, the barbecued chicken I made was pretty good and easy since I cooked it in the crockpot.
Tender Barbecued Chicken
Chicken breasts or 3-4 pound broiler chicken (I used chicken breasts)
1 medium onion, thinly sliced
1 medium lemon, thinly sliced
18 oz bottle of barbecue sauce (I splurged and used Sticky Fingers Memphis Original)
3/4 cup cola flavored soda
Place chicken in crockpot. Top with onion and lemon. Combine barvecue sauce and cola. Pour into crockpot. Cook breast 4 hours. Cook broiler for 8 hours. Cut into serving pieces and serve with barbecue sauce.
I thought it was pretty good. Of course, it all depends on what kind of barbecue sauce you use. The best part was that it was so easy.
I also want to include one of my old recipes. It's not old in that I have had it a long time; it's old in that I have made it a lot because it is so good and easy. We had it with the barbecue and finished off the leftovers with the shrimp.
Corn Bread Pudding
(from Taste of Home) August/September 2006)
2 eggs
1 cup sour cream
1 can (15.25 oz) whole kernel corn, drained
1 can (14.75 oz) cream-style corn
1/2 cup butter, melted
1 package (8.5 oz) corn bread/muffin mix
1/4 teaspoon paprika
Throw the first five ingredients into a bowl and mix. Then add the corn bread mix until blended. Pour into a greased 3-qt baking dish. Sprinkle with paprika. Bake, uncovered, at 350 degrees for 40-45 minutes or until a toothpick inserted near the center comes out clean.
This is so good that we ate almost all of it in two nights. Yummy!
Did you try something new this week? Leave a link and let us know.

I do a recipe similar to your BBQ chicken but mine's called Coca-Cola Chicken and I do mine on the stove top. All I do is add BBQ sauce and a can of coke to my cubed chicken. Yummy!!
It does sound very similar. I like the crockpot because I can throw everything in and forget about it!
I checked in last night at about 2am your time to link up but you hadn't posted yet; the thought actually hit me that maybe we weren't doing it this week, LoL.
Anyway, I wanted you to know that I did post at midnight last night because I've been so late the last few weeks:)
Sounds yummy and easy Nikki. I've seen recipes calling for coke, but I've never tried one out. It didn't give you the jitters, did it? Haha You know, the caffeine in the coke:) Not my best joke;)
I wish I would just happen to have shrimp in the freezer. I don't care for it (I used to devein it as a job) but all of my boys are quite fond of it.
2 AM? Do you know what I do at 2 AM? I am ASLEEP! What are you doing up at midnight?
I used caffeine-free Coke because I did not want Daniel to be kept awake. That would be awful!
I buy shrimp when it's on sale because we like it. I understand why you don't care for it. I had a friend who worked at Baskin-Robbins for a while, and she couldn't stand ice-cream for a long time afterwards.
NOTHING could make me dislike ICE CREAM!!! But I did get tired of Donuts when I worked for Dunkin Donuts during my college years:)
Just wait til you add another little lamb to your fold my dear, you'll be awake at midnight just to get a little bit of peace and quiet alone time. Sometimes it's as needed as sleep.
Sorry about my link. I redid it, but it wouldn't let me undo the last one, so feel free to delete.
I added my recipe, though it didn't turn out so well!
Yay! I actually cooked this week!! :)
Are you asleep right now? hahaha
I better be careful or you might block me from your site for stalking;)
Just wanted to see how many joined in this week; 5 with you included!
Have a great weekend!:)
Yes, I was asleep at 1:52 AM. I am generally in the bed by 10:00 or 10:30. I get my quiet time mostly in the afternoon when my children nap. But yours don't nap anymore, do they? What a shame!
We had a good turnout this week, didn't we? What fun!
Cool, I can't wait to look at recipies. i am in southern poland typing on a weird german laptop, but it is fun. I got internet for a fewminutes. :) iza is napping, just fed olivia. it has been fun here but hot and no ac anywhere. i am rather tired but enjoying being able to not ave to cook, cleaan and just enjoy the babies. olivia is smiling more and more and \i just love it. one little cafe we ate at this morning had ac... i have a fan now and had cool cloths on my babies, which were only wearing diapers. haha. we are in the middle of no where, farmland, horses, hay, barns, chickens, old school place that is like going back in time. fun fun fun and relaxing. so nice to be away from the city we live in!!!! i loved the link you sent me and left a comment on her post about mil. you will have to check it out :) hugs
Hey Nikki:) You DO know there is a 3 hours difference between us, right? LoL I am generally not up at 1:52am myself; now 10:52pm still usually has me prowling about the house;) Sometimes I forget about the time difference until I look at a comment I've left and see it appears as if I'm up all hours of the night! Anyway, yes it was fun. I've been wanting to try out alot of these recipes for so long, and this has helped to motivate me to do it:)
I know there is a time difference, but I forget sometimes, too. I am exhausted by 10:00, so I try to get in the bed then. I really don't want to see 11:00 PM. That's just too late for me!
I'm glad that I've given you the extra motivation to get you trying those new recipes. It's helped me, too. Now I look for new recipes all the time instead of cooking the tried and true ones.
We want a new post!!!:)
